Healthy Living Market and Café has added Chef Michael Daley to the culinary team at the South Burlington, Vermont location. Daley will partner with Healthy Living’s growing roster of culinary talent to further develop the independent party’s recently introduced HL Fresh line of chef-prepared meals.
He joins Healthy Living after a long career in the restaurant industry, having run both Michelin Star and AAA Five Diamond kitchens. As the culinary director and chef for the Mourad and Aziza restaurants in Mourad Lahlou in San Francisco at the start of the coronavirus pandemic, Daley handled the closure and worked to reduce increased food insecurity in the area. Under his leadership, the restaurants teamed up with World Central Kitchen to feed more than 23,000 needy people over a 10-week period. He also partnered with Family House San Francisco, a childhood cancer center, to provide 400 meals a week to at-risk children and their families. To stabilize the restaurants’ finances, Daley developed a meal kit, Mourad at Home, that kept staff working and generating income.
At Healthy Living, Daley will focus on HL Fresh’s robust rotating menu of seasonal, local and home cooking, prepared in a kitchen that emphasizes creativity and the highest quality ingredients.
“At Healthy Living, I work with chefs who share the same ideals as I do,” says Daley. “We cook from scratch, and cook seasonally. I work in the cafe and am still a chef, but with more creative freedom. I love working with like-minded professional chefs with an incredible depth of talent. “
The roster of restaurant industry chefs also includes VP of Culinary Matthew Jennings, Culinary Director Scott Como and Chefs Derek Robert and Jimmy Winslow.
